SGS Spinach Artichoke Dip (GF)

Think classic comfort appetizer, but healthier. Sneaky healthy. Make this for your next party and be prepared for an empty baking dish. This comes together so quickly and with all of the traditional flavors of spinach artichoke dip. By adding a can of Great Northern beans to the mix, you add fiber and protein without anyone noticing.

 

Ingredients

  • 1 can Great Northern beans, drained

  • 2 oz cream cheese

  • ½ cup sour cream

  • 1 10 oz jar whole artichoke hearts (not marinated), drained

  • ¾ cup grated Parmesan cheese + 1/2 cup for topping

  • 1 cup frozen spinach

  • ½ tsp onion powder

  • 3 cloves garlic

  • 1 tsp dried chives

  • 1 tsp Himalayan salt

  • Pepper to taste

  • 1 tbsp extra virgin olive oil


Equipment

  • Food processor

  • Medium saucepan 

  • Square glass baking dish


Instructions

  1. Preheat the oven to 350 degrees.

  2. Place spinach and 1/3 cup of water in a saucepan over medium heat.

  3. Add beans, cream cheese and sour cream to food processor. Puree on high until smooth.

  4. Add artichoke hearts, garlic, onion powder, Parmesan cheese, dried chives, salt and pepper to food processor and pulse until combined, but still chunky.

  5. Cook spinach until fully thawed, about 5 minutes. Drain off excess water and add to food processor. Pulse a few times to combine.

  6. Pour mixture into a square 9x9 glass baking dish. Top with 1/2 cup grated Parmesan cheese and 1 tbsp extra virgin olive oil.

  7. Bake at 350 for 30 minutes then turn oven to broil on high. Broil for 4 minutes, until browned and bubbly on top. Serve hot!
