Sausage-Stuffed Apples with Rosemary and Buttered Breadcrumbs (GF)

These sausage-stuffed apples are so delightfully elegant and unexpectedly delicious. They look gourmet and couldn’t be easier, plus they fill your kitchen with the smell of BAKED APPLES (cue audible exhale). This is a classic savory and sweet recipe that works so well as an appetizer to take to an event or serve at home.

 

Ingredients

  • 2 large Honey Crisp apples

  • ½ lb ground Italian sausage

  • 1 tbsp extra virgin olive oil

  • 1 stick celery, finely diced

  • ¼ yellow onion, diced

  • ½ tsp cinnamon

  • ½ tsp ground ginger

  • ¼ tsp ground nutmeg

  • ½ cup crumbled blue cheese or shredded Gruyere cheese

  • 3 sprigs fresh rosemary

  • 1 tbsp butter, melted

  • 1/3 cup panko breadcrumbs (GF or regular)

  • Salt and pepper to taste


Equipment

  • Melon baller  

  • Medium skillet  

  • Baking sheet  


Instructions

  1. Pre-heat your oven to 375 degrees.

  2. Slice the tops off your apples and then scoop out the core. You can use the melon baller or a knife and spoon. Leave ~1/2 inch of apple as your base. Dice the scooped out apple (sans core) and reserve for sausage stuffing.

  3. Place your onion and celery in a skillet with 1 tbsp EVOO over medium heat. Sauté until your onions are translucent, but not burnt, about 4-5 minutes. Turn the heat up to medium high and add your sausage, breaking it up with a spoon and cooking until browned, about 5 minutes. Add your reserved apple, ginger, cinnamon, nutmeg, and a pinch of salt. Turn the heat to medium low and sauté a few more minutes. Stir in your blue cheese or Gruyere cheese right before placing in apples so it doesn’t melt too much.

  4. Place your cored apples on a baking sheet coat inside and out with the melted butter, pouring remaining butter onto the pan. Coat your rosemary sprigs in the butter on the pan. Spoon your sausage mixture into the apples and place rosemary sprigs on top. Put into the oven to bake. 

  5. Clear out the skillet used for sausage with a slotted spoon, leaving remaining oil and fat. Add your breadcrumbs and a sliver or butter and a pinch of salt at medium low heat. Toast until lightly browned. 

  6. After baking for 40 minutes, top your apples with the breadcrumbs, spoon butter over the top and cook for 3-5 min more. Serve hot!
